Lunch: Beer-Battered Onion Rings

Recipe by Lauren Haslett Light, fluffy, and super crunchy, this onion ring batter gets its perfect texture from Bisquick!

Ingredients

1 1/4 c. Bisquick
1/2 c. cornstarch
1/2 tsp. sweet paprika
1/2 tsp. ground coriander
1 c. light beer (such as Heineken)
2 large yellow onions, cut crosswise into thick slices
Canola oil, for frying
Ketchup or hot sauce, for dipping (optional)

Instructions

In a large mixing bowl, combine Bisquick, cornstarch, paprika, coriander, and beer. Stir until thoroughly incorporated.
Heat oil in a large saucepot until it reaches about 360 degrees F on a deep-fry thermometer. Line a large baking sheet with paper towel and set aside.
Dip onion slices in batter, allowing excess to drip off before proceeding. Drop battered onion rings in hot oil, flipping at least once during cooking to ensure even browning on all sides. When rings are deep golden brown, remove from oil and transfer to paper towel-lined baking sheet. Serve warm.
