Lunch: Steamed Broccoli with Gremolata Crumbs

Broccoli is one of the non-starchy vegetables that has a very low glycemic index (GI), which is beneficial for reducing blood sugar levels. Broccoli is also a source of DIM (Diindolymethane). Diindolymethane is very effective in reducing the testosterone levels in the body, an action that would automatically curb male dominant features and regulate the estrogen levels in the system. Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to.

Ingredients

1 lemon
1 bag broccoli florets
2 tbsp. water
1 tsp. olive oil
1 clove garlic
1 slice firm white bread
1/4 tsp. salt
2 tbsp. chopped fresh parsley leaves

Instructions

From lemon, grate 1/2 teaspoon peel and squeeze 1 tablespoon juice.
In microwave-safe bowl, place broccoli and water. Cover with vented plastic wrap and cook in microwave on High 4 to 5 minutes or until tender-crisp.
Meanwhile, in small skillet, heat oil on medium-high. Add garlic and cook 30 seconds. Stir in lemon peel, bread crumbs, and salt and toss to combine; remove skillet from heat and stir in parsley.
Drain broccoli if necessary; transfer to serving bowl and toss with lemon juice. Sprinkle crumb mixture over broccoli to serve.
