Lunch: Fruity Beauty

Leafy greens, tart citrus, sweet balsamic, and crunchy pumpkin seeds add refreshing taste and texture to earthy beets.

Ingredients

1/3 c. chopped cooked beets
1 clementine
1 tsp. extra-virgin olive oil
1 tsp. balsamic vinegar
.13 tsp. salt
.13 tsp. Pepper
1 c. mixed greens
1 tsp. unsalted raw pumpkin seeds

Instructions

In medium bowl, toss beets with clementine segments, olive oil, balsamic vinegar, salt, and pepper.
Serve over mixed greens and garnish with unsalted raw pumpkin seeds.
