Lunch: Bluth Frozen Bananas

Ingredients
4 bananas, halved crosswise
1 c. semisweet chocolate chips
2 tbsp. coconut oil
Instructions
Insert a popsicle stick into the bananas and transfer to a parchment-lined baking sheet. Freeze 2 hours.
Meanwhile, set up a double boiler to make chocolate shell. Bring a saucepan of water to a simmer. Add a glass bowl and add chocolate. Stir until melted, then stir in coconut oil.
Remove from heat and let cool to room temperature.
Dip frozen bananas completely in chocolate shell.
To make the "G. O. B.,” immediately dip the chocolate-dipped banana in peanuts. To make the “The George Daddy,” sandwich the chocolate-dipped banana between two full chocolate graham crackers.
Place completed bananas back on the parchment-lined baking sheet and return to freezer for another 15 minutes.
