Lunch: Gingery Steak and Corn Salad

Ingredients

1/2 c. toasted sesame oil
1/2 c. rice vinegar
1/3 c. Dijon mustard
1 tsp. grated peeled fresh ginger
kosher salt
Black pepper

Instructions

Make the Ginger Dijon Vinaigrette: Shake sesame oil, rice vinegar, Dijon, ginger, salt and pepper.
Make the Salad: Drizzle ginger vinaigrette over steak, baby kale, cucumbers, and corn.
