Lunch: Date-Nut Sticks
Sweet and sticky sticks with dates, coconut and nuts.
Ingredients
1 1/2 sticks butter
2 eggs, beaten
2 cups sugar
1 (8 oz) box chopped dates
1 teaspoon vanilla extract
1 cup chopped pecans
1 1/2 cups crispy rice cereal
3 cups finely grated coconut
Instructions
In a saucepan over medium heat, melt butter. Add eggs, sugar and dates. Bring to a boil, reduce heat to low, and cook 10 minutes, stirring constantly. Remove from heat. Stir in vanilla, nuts and crispy rice cereal. Cool and shape into finger-sized sticks. Roll in coconut. Makes about 45 sticks
