Barley is about the best grain a woman with PCOS can eat. It is low in calories and has the lowest GI of all grains. Low-GI grains such as barley take much longer to digest and create a slow, steady rise in blood glucose and insulin levels. As mentioned before on Fertility Chef, low-GI foods reduce cravings. If possible, try and find hulled barley as it is the most nutrient dense of all types of barley.
Ingredients
1 tbsp chicken base
2 tsps tabasco sauce
1 cup barley
36 oz turkey breast meat
1 cup celery, chopped
1 cup mushrooms, sliced
2 oz sweet onions
6 oz baby carrots
6 cups water
Instructions
1. Mix all ingredients in a crock-pot.
2. Let simmer for 4-6 hours or until vegetables are tender.
3. Note: add some fresh herbs and spices to give additional flavor.
