Snack: Cookie Dough Pops

Recipe by Lindsay Funston Talk about a triple threat: Layers of cookie dough, chocolate fudge, and vanilla ice cream taste too good on a stick.

Ingredients

1 stick butter, softened
3/4 c. sugar
1 tsp. vanilla extract
1 c. all-purpose flour
1 tsp. kosher salt
1 c. mini chocolate chips
1 pint vanilla ice cream, softened
1/2 c. chocolate fudge sauce
6 Dixie Cups and popsicle sticks

Instructions

Make cookie dough: In a stand mixer, beat butter, sugar, and vanilla extract until smooth. Add flour and salt and beat until combined. Stir in chocolate chips. Transfer to a freezer to firm up, 25 minutes.
Meanwhile, spoon vanilla ice cream into Dixie Cups, filling 1/3 of the bottom. Top with a layer of chocolate fudge sauce and transfer to the freezer until cookie dough is firm.
Pat a layer of cookie dough into Dixie Cup and insert a popsicle stick.
Freeze until firm, at least 1 hour. When ready to eat, peel apart Dixie Cup.
