Health and fertility benefits of Mushroom and Barley Stew

Barley is about the best grain a woman with PCOS can eat. It is low in calories and has the lowest GI of all grains. Low-GI grains such as barley take much longer to digest and create a slow, steady rise in blood glucose and insulin levels. As mentioned before on Fertility Chef, low-GI foods reduce cravings. If possible, try and find hulled barley as it is the most nutrient dense of all types of barley.

Ingredients

1 dash pepper
1/2 tsp leaves thyme
1 dash salt
3 cups vegetable broth
1 cup chopped carrots
1 cup chopped celery
6 cloves garlic
3 cups pieces or slices mushrooms
1 cup chopped onions
2 large red potatoes
1/3 cup barley

Instructions

1. Mix all ingredients in a large pot.

2. Bring to a boil and lower heat to a simmer.

3. Cover and cook for 30-45 minutes until vegetables are soft.

4. Serve with crusty bread.
