Soup: Chicken Chili Stew
A yummy, low-fat stew that'll keep you full and satisfied.
Ingredients
1 tsp chili powder
2 tbsps vegetable oil
2 cups chopped or diced cooked chicken meat
1 can cream of chicken soup
14 1/2 fl oz chicken broth
1 cup chopped onion
1 cup chopped green bell pepper
14 1/2 oz tomatoes, diced
16 oz mixed vegetables, frozen
Instructions
1. Heat the oil in a saucepan over medium heat. Cook green bell pepper and onion until tender, stirring often.
2. Add cream of chicken soup, broth, chili powder and cooked chicken. Bring to a boil and then simmer for 10 minutes.
3. Add tomatoes and mixed vegetables. Cook for 30 minutes and then serve.
