Lunch: Grilled Steak au Poivre

A French classic, steak au poivre is a simple dish of perfectly-cooked beef seasoned with lots of black pepper. This recipe tweaks the formula slightly by adding coriander and fennel seeds to the mix. This recipe is a variation on our Steak with Argentine

Ingredients

2 tbsp. crushed black peppercorns
1 tbsp. coriander seeds
1 tsp. fennel seeds
1 tsp. kosher salt
4 New York beef strip steaks

Instructions

In mortar with pestle, or with heavy skillet, crush peppercorns, coriander seeds, and fennel seeds until coarsely ground. Stir in kosher salt.
Sprinkle mixture all over steaks; pat into meat. Immediately place on grill; cook 7 to 8 minutes for medium-rare or until desired doneness, turning over every 2 to 3 minutes. Transfer to wire rack. Let stand 5 minutes. Serve.
