Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

10 ounces blueberries (2 cups)
12 ounces blackberries (2 1/2 cups)
1 cup sugar
1/2 cup water
1 (3-inch) cinnamon stick
1 whole clove
1 green cardamom pod (optional)

Instructions

Bring berries, sugar, water, spices, and a pinch of salt to a boil in a heavy medium saucepan, stirring until sugar is dissolved. Reduce heat and simmer, uncovered, stirring occasionally, until fruit is very soft, about 30 minutes. Strain thourough a fine-mesh sieve into a bowl, pressing gently on and then discarding solids. Cool, then chill, covered.
