Health and fertility benefits of Dutch Apple Pancakes

Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. (Reference: http://www.ncbi.nlm.nih.gov/pubmed/11506060).

Ingredients

3/4 cup 1% milk
1 cup egg substitute
1/2 tsp ground cinnamon
1/4 tsp nutmeg
2 tbsps low fat margarine
1 medium granny smith apple, cut into 1/2" slices
6 tsps granulated sugar
1/3 oz sweetener
1/3 cup whole wheat pastry flour

Instructions

1. Heat oven to 400° F (200° C).

2. Heat a tablespoon of the margarine in a 10" cast iron skillet, over medium heat.

3. Add apple pieces and cook until soft and brown, about 5 minutes.

4. Puree the remaining tablespoon of margarine, flour, sugar substitute, sugar, cinnamon, nutmeg, milk and eggs in a blender until just mixed. About 1 minute.

5. Pour batter into the skillet over the sauteed apples and put in the oven and bake for 15 minutes until puffed and set.

6. Serve hot.

7. Bon Appetite!
