Baked: Banana Bread III

Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients
1 medium egg
1 tsp cinnamon
1 tsp vanilla
3.9 oz apple sauce
4 medium bananas
1/2 tsp baking powder
1 tsp baking soda
3/4 cup sugar
1 cup rolled oats
3/4 cup flour
3/4 cup whole wheat flour
Instructions
1. Mash ripened bananas in a bowl.
2. Add the rest of ingredients and mix just until moistened.
3. Pour into large loaf pan sprayed with cooking spray like Pam.
4. Bake at 350 °F (175 °C) for 1 hour and 5 minutes, or until wooden skewer comes out clean.
5. This comes out so delicious and moist; I was very impressed that it made "bread" instead of mush.
6. Note: if you wish, add a small amount of chocolate chips for an extra treat.
