Ingredients
1/4 cup chopped green chiles
6 fl oz lite coconut milk
2 tbsps soy sauce
4 large chicken breasts
3/4 cup lime juice
1/4 cup cilantro, chopped
2 cloves garlic
Instructions
1. Put garlic, green chile, cilantro, lime juice, soy sauce and coconut milk in a food processor and process to a smooth puree.
2. Marinate chicken with about 1/2 of the puree for about an hour in the refrigerator.
3. Broil the chicken for 12 - 15 minutes.
4. Place the remaining marinade in a pot and bring to a boil.
5. Lower the heat and simmer for several minutes.
6. Pour over cooked chicken breasts.
