Health and fertility benefits of Coconut Soba Noodles with Ginger Broccoli

Broccoli is one of the non-starchy vegetables that has a very low glycemic index (GI), which is beneficial for reducing blood sugar levels. Broccoli is also a source of DIM (Diindolymethane). Diindolymethane is very effective in reducing the testosterone levels in the body, an action that would automatically curb male dominant features and regulate the estrogen levels in the system.

Ingredients

1 (9.5 ounces) package soba noodles
2 teaspoons coconut oil
1 teaspoon freshly grated ginger
1 garlic clove, minced
2 cups broccoli florets
1 teaspoon salt
1 (15-ounce) can light coconut milk
2 tablespoons lime juice
1 tablespoon chopped cilantro

Instructions

Cook the soba noodles according to the package directions. Drain, rinse with cold water, and set aside.
Heat the oil in a small pot over medium heat. Add the garlic and ginger and cook for 1 minute.
Add the broccoli florets, salt and coconut milk, bring to a boil, reduce to medium and cook for 5 minutes.
Add the noodles to the coconut milk mixture and toss to thoroughly coat.
Sprinkle with the lime juice and cilantro and serve.
