Lunch: Goat Cheese and Red Pepper Quesadillas

These easy appetizer quesadillas have plenty of piquant flavor to start a Southwestern meal off right.

Ingredients

4 plain flour tortillas
4 clove garlic
1/2 c. thinly sliced roasted red pepper
1/2 c. crumbled goat cheese
2 tsp. pickled jalapeño peppers
salt and pepper

Instructions

Heat oven to 400 degrees F. On heavily buttered cookie sheet, place two tortillas. Spread half of mashed garlic over each tortilla; top each with half of red pepper, goat cheese, and jalapeño pepper, to taste. Season with salt and pepper.
Press remaining two tortillas on top of filling to seal well and form quesadillas. Using large spatula, turn quesadillas so buttered side is uppermost.
Bake 4 to 5 minutes; turn; bake 4 to 5 minutes longer until quesadillas are piping hot and golden. Serve immediately, cutting each into 6 wedges, and garnishing each wedge with jalapeño slices, if desired.
