Baked: Oatmeal Raisin Chocolate Chip Cookies

Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

1/2 cup unsalted butter
1/2 cup semi sweet chocolate chips
1 large egg
1 cup oatmeal
1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1 tsp vanilla extract
1 cup golden raisins
1/2 tsp baking powder
1/4 tsp baking soda
1/2 cup light brown sugar
1/2 cup granulated sugar
1 cup flour

Instructions

1. Cream together butter, white sugar and brown sugar. Mix in vanilla and egg.

2. Sift together flour, spices, baking powder, baking soda, and salt.

3. Add flour mixture to sugar mixture and beat until combined.

4. Mix in oatmeal, raisins, and chocolate chips.

5. Drop by spoonful onto greased cookies sheet.

6. Bake in preheated oven at 375° F (190° C) for approximately 12 minutes. Transfer to wire rack to cool.
