Lunch: Skinny Panda Express Chow Mein

Recipe by Lindsay Funston You know you always make a run for it at the mall. Now recreate it at home.

Ingredients

1 lb. rice noodles
1/2 c. low-sodium soy sauce
2 cloves garlic, minced
1 tsp. ground ginger
1 tbsp. extra-virgin olive oil
1 large onion, diced
2 stalks celery, thinly sliced
1/2 head cabbage

Instructions

In a large pot of boiling water, cook noodles according to package directions until al dente. Drain.
In a small bowl, combine soy sauce, garlic, and ground ginger.
In a large skillet, heat oil over medium-high heat. Add onion, celery, and cabbage and cook until tender, stirring occasionally, 6 to 8 minutes.
Add noodles to skillet and soy sauce and stir until fully coated.
