Lunch: Easy Carbonara

Recipe by Lindsay Funston When you're craving a comfort food, nothing—I repeat, NOTHING—will cure you like creamy carbonara.

Ingredients

12 oz. spaghetti
8 slices bacon
3 eggs, whisked
1 c. grated Parmesan
kosher salt
Freshly ground black pepper

Instructions

In a large pot of salted boiling water, cook spaghetti according to package directions until al dente. Drain and reserve 1 cup pasta water.
Meanwhile, in a large skillet over medium-low heat, cook bacon. Transfer slices to a paper towel-lined plate to let drain, then chop. Reserve fat.
Reduce heat to low. Add spaghetti to bacon fat and toss until fully coated. Pour over whisked eggs and cheese and stir vigorously until creamy (be careful not to scramble eggs). Add pasta water a couple tablespoons a time until saucy.
Season generously with salt and pepper and stir in bacon.
