Lunch: Quick-and-Easy Mexican Pasta

Ingredients

1 lb. rotelle (spiral) pasta
1 can red kidney beans
1 can pitted black olives
1 can salsa-style chunky tomatoes
1 c. reduced-fat sour cream
1 c. shredded Cheddar cheese

Instructions

Cook pasta according to package directions.
Meanwhile rinse and drain beans and slice olives.
Drain pasta and transfer to a large serving bowl. Immediately stir in tomatoes, beans and olives. Top each serving with sour cream and cheese.
