Lunch: Skirt Steak Tacos
Recipe by Frank P. Melodia Serve this seasoned skirt steak in build-your-own-tacos with assorted salsas and toppings.
Ingredients
2 lb. well-trimmed skirt steak
kosher salt
Freshly ground black pepper
1/4 c. olive oil
1 1/2 tsp. ground cumin
1 tsp. garlic powder
Instructions
Pat dry skirt steak pieces with paper towels and season all over with kosher salt and freshly ground black pepper.
Mix olive oil ground cumin and garlic powder. Brush steak with oil mixture and grill over hot coals (or broil 4 inches from heat source), 3 minutes per side, brushing with any remaining oil, for medium-rare doneness.
Let rest 5 minutes before slicing across the grain into thin strips. Serve in build-your-own-tacos with assorted salsas and toppings.
