Lunch: Oven-Roasted Ribs

Recipe by Donald Link These meaty, flavorful ribs require only a few ingredients — including Donald Link's Texas Campfire Dry Rub — and a long, slow roast at a low temperature to keep them moist and tender.

Ingredients

1 1/2 rack St. Louis-style ribs
1/4 c. Texas Campfire Dry Rub
1/2 c. beer

Instructions

Season ribs generously with spice rub on both sides.
Lay ribs in a large piece of foil with sides up and pour in the beer. Form a pocket with the foil and bake at 325 degrees F for 2 1/2 hours.
Remove ribs from oven and let cool. Cut ribs so they are all in one-bone pieces.
Grill pieces over medium-high heat for about 5 to 7 minutes on each side until they are golden brown. Serves as is or with your favorite barbecue sauce. See all recipes from Chef Donald Link.
