Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

2 large eggs
8 oz light sour cream
1/2 tsp cinnamon
1 tsp ground cinnamon
1/2 tsp salt
1 tsp vanilla
2 cups slices apple
1 tsp baking soda
1/2 cup packed brown sugar
2 cups all purpose flour
5 tbsps butter

Instructions

1. Pre-heat oven to 350 °F (175 °C).

2. Lightly grease a 13 x 9 "glass baking dish with 2 teaspoons of the butter. Cream together 1 stick of the butter in a large bowl.

3. Add two eggs, one egg at a times, beating after adding each one.

4. In a separate bowl sift together 1 cup flour, baking soda, teaspoon of cinnamon and salt.

5. Add to the wet ingredients 1 cup sour cream, 1 tsp vanilla and the dry ingredients that were mixed in the other bowl.

6. Fold in the apples. Pour into dish spreading to the edges.

7. Combine 1/2 cup brown sugar, 1/2 cup flour, 1/2 teaspoon cinnamon, and 4 tablespoons butter in to separate bowl and mix until it makes a coarse crumble.

8. Add to top of cake mix. Cook until golden brown (35-40 minutes). Let cool for 10 minutes.
