Lunch: Greek Fish Stew
A delicious variation on our All-You-Can-Eat Soup Diet Basic Recipe. Try these others: Mexican Chicken Soup, Minestrone Soup, Southwest Chili, Thai Shrimp Soup, Goulash, Red Beans and Rice Stew, and Vegetable Curry Soup.
Ingredients
2 c. All-You-Can-Eat Soup Diet Basic Recipe
1 small red potato
4 oz. skinless catfish or cod fillet
1 tbsp. Chopped fresh dill
2 tbsp. crumbled feta cheese
Instructions
Prepare All-You-Can-Eat Soup Diet Basic Recipe.
Place diced potato in saucepan with water to cover; heat to boiling. Reduce heat; cover and simmer 5 minutes or until tender. Pour off water. Add Basic Soup and fish fillet; heat to boiling. Reduce heat; cover and simmer 3 minutes or until fish turns opaque. Gently stir in dill. Sprinkle with feta cheese to serve.
