Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients
2 eggs
3/4 cup milk
1 teaspoon ground cinnamon
2 tablespoons white sugar
1/4 cup applesauce
6 slices bread
Instructions
In a large mixing bowl, combine the eggs, milk, cinnamon, sugar and applesauce; mix well.
Soak bread one slice at a time until saturated with liquid.
Cook on a lightly greased skillet or griddle over medium/high heat until lightly browned on both sides. Serve hot.
