Lunch: Guacamole Cheeseburger with Chipotle Ketchup
Recipe by Judy Kim If you love guac on your burritos, you've gotta try loading it up on a juicy burger.
Ingredients
1 1/3 lb. 80% lean ground beef, formed into 4 patties (1/3 lb. each)
kosher salt
Freshly ground black pepper
4 slices cheddar
4 potato hamburger buns
1/2 c. ketchup
1 chipotle pepper, chopped
4 slices red onion
green leaf lettuce
1 c. guacamole
Instructions
Preheat grill or grill pan over high heat. Season burgers with salt and pepper. Cook for 2 minutes per side; add cheese and cover until melted. Transfer to a paper towel–lined plate to rest.
Meanwhile, in a small mixing bowl combine ketchup and chipotle.
Layer burgers on potato roll with red onion, lettuce, guacamole, and chipotle ketchup.
