Health and fertility benefits of Spinach and Sausage Quiche

Fresh spinach is an excellent source of vitamin K, vitamin A, vitamin C, and vitamin B6, all of which have significant roles in reducing inflammation in the body, all of which help in the case of infertility.

Ingredients

3/4 cup lowfat cottage cheese
3/4 cup shredded mozzarella cheese
1/4 cup fluid heavy cream
2 medium eggs
1/2 tsp parsley
1 link pork sausage
1 large onion
5 oz frozen spinach
1 crust, single 9" pie shell

Instructions

1. Pre-bake the pie shell per instructions (or until looks like it's sweating).

2. De-case sausage link and cut onion into thin rings, then sauté the sausage and onions and drain fat.

3. Arrange the sausage and onions over the bottom of the pie shell.

4. Squeeze liquid from spinach, then in a bowl whisk all remaining ingredients.

5. Top sausage and onions with cheese mixture.

6. Cover with aluminum foil and bake at 350° F (175° C) for 35-40 minutes or until done.

7. Let sit 5-10 minutes before slicing.

8. Note: you could easily use fat free mozzarella and/or turkey sausage instead to cut down on fat content. Yummy with a salad and steamed carrots.
