Lunch: Veggie Kebobs
Recipe by Vera Kaltinick A rainbow of zucchini and bell peppers adorns these simple skewers. Serve extra marinade on the side for dipping.
Ingredients
8 wooden skewers
3 medium organic zucchini
2 organic red peppers
2 organic yellow peppers
Instructions
Make skewers with chunks of zucchini and squares of peppers.
To make the marinade: Whisk all the ingredients together in a bowl.
Spoon the marinade over the zucchini and pepper skewers and place them on a grill. Cook until evenly browned on all sides.
