Nuts are a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity. Walnuts are low on the glycemic index. What’s more, they also lower the glycemic index of other foods that you eat in conjunction with these nuts. Any kind of nuts provide a healthy source of fat and a great way to encourage PCOS weight loss.
Ingredients
2 1/3 cups flour
1 1/2 teaspoons baking powder
1 teaspoon fine salt
2 tablespoons malted milk powder
14 tablespoons unsalted butter, softened, cut into 1-inch cubes
1 3/4 cups firmly packed dark brown sugar
2 large eggs
2 teaspoons pure vanilla extract
3/4 cup malted milk balls, coarsely chopped in a food processor
3/4 cup semisweet chocolate chips
3/4 cup toasted walnuts, chopped
Ice cream, for serving
Instructions
Preheat the oven to 350 degrees F.
In a mixing bowl, whisk together the flour, baking powder, salt and malted milk powder.
In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and brown sugar on medium speed until completely combined. Scraping down the sides of the bowl, add the eggs and vanilla. Beat until combined.
Add the flour mixture in 2 batches and beat until just combined. Add the malted milk balls, chocolate chips and walnuts and beat until just combined, about 10 seconds.
Pour the mixture into a buttered 9 by-13-inch baking pan. Bake for 25 to 30 minutes, or until a toothpick inserted into the center of the blondie comes out clean.
Transfer to a wire rack and let cook for 20 minutes. Cut the blondies into squares and serve with ice cream.
