Lunch: Corona Chicken Tacos
Recipe by Candace Braun Davison These simple tacos call for half a Corona—sip the rest while you cook!
Ingredients
1/4 c. chicken broth
1/2 bottle Corona
2 bell peppers, sliced
1 white onion, sliced
1 tsp. cumin
kosher salt
Freshly ground black pepper
1 rotisserie chicken, shredded
2 limes
Medium-sized flour or corn tortillas
Fresh salsa
shredded Mexican cheese
Instructions
In a sauté pan over medium heat, bring broth and Corona to a simmer. Add peppers and onions, stirring every so often and cooking until softened, about 2 to 3 minutes. Season with cumin, salt, and pepper.
Stir in chicken. Squeeze juice from both limes on top and cook 2 to 3 minutes more, stirring the mixture to coat the chicken thoroughly.
Add filling to each tortilla, topping with salsa and cheese.
