Appetizer: Deviled Eggs

Delicious for a picnic, lunch or dinner or to keep in the fridge for a snack.

Ingredients

6 large eggs
3 tbsps mayonnaise
1 serving 1 packet sweetener
1 tsp or 1 packet mustard
1 tsp vinegar
1 dash salt
1 tsp paprika
1 dash pepper

Instructions

1. Place eggs in enough cold water to cover completely and bring to a rolling boil over high heat. Reduce heat to a lower medium boil and cook an additional 12 minutes.

2. Promptly chill eggs in ice water so yolks stay bright yellow, keep adding ice as necessary. Rapid chilling helps prevent a greenish ring to appear around the yolk.

3. Remove shells from eggs, and halve lengthwise with a knife.

4. Carefully remove the yolks, and place in a medium bowl.

5. Mash yolks with a fork, and add remaining ingredients.

6. Very carefully spoon mixture back into the egg white halves. Garnish with a light sprinkling of paprika (optional). Enjoy.
