Lunch: Mojitos

Mix everything for this Cuban cocktail except the club soda before leaving for the beach. To keep the cocktail sparkling, add the club soda just before serving.

Ingredients

1 bunch fresh mint
1 c. sugar
2 c. fresh lime juice
2 c. light rum
2 c. club soda

Instructions

Mix the cocktail: In the bottom of a large pitcher, using a wooden spoon or pestle, crush (muddle) mint leaves, sugar, and lime juice together. Stir in rum and club soda. Serve immediately in individual glasses over crushed ice.
