Lunch: Pepperoni Pizza Turkey Meat Loaf

For a spicy twist on classic meat loaf, whip up this tantalizing combination of ground turkey, marinara sauce, roasted peppers, shredded cheese and seasoned bread crumbs topped with pepperoni and fresh basil.

Ingredients

1 1/4 lb. ground turkey
1 c. bottled marinara sauce
1/2 c. bottled roasted yellow or red peppers
1/2 c. shredded Italian 6-cheese blend
1/2 c. Italian seasoned dried bread crumbs
1/2 c. finely chopped onion
16 small slices 70%-less-fat turkey pepperoni (such as Hormel)
1 large egg
2 tsp. minced garlic
1/4 tsp. salt
Garnish: fresh basil leaves

Instructions

In a medium bowl, using your hands or a wooden spoon, mix ground turkey, 1 ⁄2 cup marinara sauce, 1 ⁄4 cup each peppers and cheese blend, the bread crumbs and onion, diced pepperoni (reserve sliced), egg, garlic and salt until blended. Pat mixture over bottom of a 3 1 ⁄2-qt slow-cooker (if using a larger cooker, pat mixture into an 8-in. round). Spread top with 1 ⁄4 cup marinara sauce.
Cover and cook on low 4 to 6 hours or until a meat thermometer (preferably instant-read) inserted in center of loaf registers 165 °F.
Spread with remaining sauce, sprinkle with remaining cheese, then top with remaining pepperoni and peppers. Cover and cook 5 minutes or until cheese melts. Sprinkle with basil; cut in wedges.
