Health and fertility benefits of Blueberry-Cinnamon Campfire Bread Recipe
Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. (Reference: http://www.ncbi.nlm.nih.gov/pubmed/11506060).
Ingredients
1 loaf (1 pound) cinnamon-raisin bread
6 large eggs
1 cup 2% milk or half-and-half cream
2 tablespoons maple syrup
1 teaspoon vanilla extract
1/2 cup chopped pecans, toasted
2 cups fresh blueberries, divided

Whisk eggs, milk, syrup and vanilla. Pour over bread; sprinkle with nuts and 1 cup blueberries. Fold edges over top, crimping to seal.
Place on a grill grate over campfire or grill until egg is cooked through, about 30-40 minutes. Remove from heat; let stand 10 minutes. Sprinkle with remaining blueberries; serve with additional maple syrup if desired.
