Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

1 package vanilla pudding and pie filling
2/3 cup fat free evaporated milk
1 cup pumpkin
1/4 tsp ground cinnamon
1 1/2 cups low fat frozen whipped topping

Instructions

1. Combine pudding mix, evaporated milk, pumpkin and cinnamon in a bowl until well combined.

2. Gently fold in the whipped topping.

3. Cover and refrigerate for at least one hour before serving.

4. Each serving is approximately 1/2 cup.
