Health and fertility benefits of Curried Turkey Salad

Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to. Researchers believe that cranberries contain substances that prevent infection-causing bacteria from sticking to the urinary tract walls. However, store-bought cranberry juice is typically all sugar - so make sure to stick with straight cranberries.

Ingredients

1/2 cup mayonnaise
2 teaspoons curry powder
1 tablespoon lemon juice
4 cups cooked turkey, diced
1/2 cup pecans, toasted and chopped
1/2 cup dried cranberries
1/2 cup scallions, green and white parts, chopped

Instructions

In a large mixing bowl stir the mayo, curry powder and lemon juice until smooth.
Add the turkey, pecans, cranberries and scallions. Gently fold to combine.
Season as desired with salt and pepper.
