Dessert: Chocolate Truffle Cupcakes

Recipe by Lauren Miyashiro These gooey chocolate treats are the perfect boxed cake hack.

Ingredients

1 can sweetened condensed milk
3 c. chocolate chips, melted
2 boxes chocolate cake mix
2/3 c. melted butter
4 large eggs
2 tsp. teaspoons vanilla
Powdered sugar, for serving

Instructions

Make fudge centers. Whisk together the chocolate chips and sweetened condensed milk until evenly combined. It will become hard to stir. Scoop small balls and place on a parchment-lined pan. Transfer pan to the freezer and freeze until the fudge is hard, about 1 hour.
Preheat the oven to 350 degrees F. Generously grease a standard 12-cup muffin tin and set aside.
Beat together the cake mix, butter, eggs and vanilla until completely combined. The batter will be very thick. Spoon a thin layer of the the batter into the bottom of each muffin cup. Add the frozen fudge balls. Cover the fudge centers with another layer of batter. Bake for 12-14 minutes. Remove and allow to cool slightly before removing from tins.
Sprinkle with powdered sugar and enjoy warm!
