Lunch: Blackberry Shrub

Recipe by The Good Housekeeping Test Kitchen Fresh berries bring sweetness and gorgeous color to this vinegar cocktail.

Ingredients

1 small container (6 oz.) blackberries, plus more for garnish
1/3 c. sherry vinegar
1 tbsp. sugar
ice
3 tbsp. elderflower liqueur
3 tbsp. vodka
Seltzer

Instructions

In a medium bowl, mash blackberries, sherry vinegar, and sugar; let stand at least 2 hours or up to overnight.
Strain out solids, reserving liquid. In tall Tom Collins glass of ice, combine 2 tablespoons blackberry liquid with elderflower liqueur and vodka. Top off with seltzer. Garnish with blackberries.
