Lunch: Slow-Cooker Spicy Cheeseburger Soup

Enjoy this cheeseburger soup that’s made with ground beef, tomatoes and lettuce – a tasty slow cooked dinner.

Ingredients

1 lb ground beef round
3 cups half-and-half
1/4 teaspoon freshly ground pepper
1 loaf (16 oz) spicy Buffalo prepared cheese product, cut into cubes
3 plum (Roma) tomatoes, chopped (3/4 cup)
1 1/2 cups shredded lettuce
1/2 cup chopped red onion
18 slices dill pickles

Instructions

Spray 3-quart slow cooker with cooking spray. In 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain. In slow cooker, stir beef, half-and-half, pepper and cheese until blended.
Cover; cook on Low heat setting 5 hours. About 5 minutes before serving, stir soup. Top individual servings with tomatoes, lettuce, onion and pickles.
