Lunch: Peas with Green Onions and Mint

The fresh mint gives frozen peas a special burst of flavor.

Ingredients

3 tbsp. margarine or butter
1 bunch green onions (about 1 cup)
3 package frozen peas
1/4 tsp. coarsely ground black pepper
1/2 tsp. salt
1/3 c. chopped fresh mint leaves

Instructions

In 12-inch skillet, melt margarine or butter over medium heat. Add green onions and cook 3 minutes or until tender. Add peas, pepper, and salt and cook, stirring frequently, 3 minutes longer or until hot.
Remove skillet from heat; stir in mint.
