Lunch: Peachy Blueberry Cobblers Recipe

Ingredients

1/4 cup all-purpose flour
1/4 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup 2% milk
2 tablespoons butter, melted
3/4 to 1 cup fresh or frozen sliced peeled peaches, thawed
1/4 cup fresh or frozen blueberries, thawed
Vanilla ice cream, optional

Instructions

In a small bowl, combine the flour, sugar, baking powder and salt. Combine the milk and butter; stir into dry ingredients until smooth. Pour into two 8-oz. ramekins or custard cups coated with cooking spray. Top with peaches and blueberries.
Bake at 350 ° for 30-35 minutes or until fruit is tender. Serve warm with ice cream if desired.
