Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

8 tbsp. cream cheese
2 tbsp. strawberry jam
1/4 c. finely chopped strawberries
2 eggs
1/2 c. milk
1/4 tsp. ground nutmeg
1 tbsp. sugar
1/2 tsp. cinnamon
8 slices Challah bread
Powdered sugar, for dusting
maple syrup

Instructions

Make the cheesecake filling. Mix cream cheese with jam and chopped strawberries until combined.
In a shallow bowl, whisk together eggs, milk, nutmeg, sugar and cinnamon.
Make sandwiches. On a slice of challah, spread cream cheese mixture then top with another slice. Repeat 4 times.
Place each of the sandwiches in the egg mixture and coat thoroughly. Meanwhile preheat the waffle iron. When hot, coat with cooking spray. Place a sandwich into the waffle iron and cook until golden brown.
Top with powdered sugar and maple syrup.
