Ingredients

2 tbsp. olive oil
2 tbsp. white-wine vinegar
2 tsp. Grainy mustard
Coarse salt
ground pepper
1 head romaine lettuce
1/2 c. chopped oil-packed roasted red peppers
1/2 c. chopped roasted almonds
1 can chickpeas
1 orange bell pepper

Instructions

In a small bowl, whisk together oil, vinegar, and mustard; season with salt and pepper. Divide dressing between 2 small airtight containers. Divide lettuce, roasted peppers, almonds, chickpeas, and bell pepper between 2 medium airtight containers. Refrigerate, up to overnight.
