Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

1 1/2 cups dry sherry
2/3 cup kosher salt
1/4 cup soy sauce
3 tablespoons sugar
1 cup coarsely chopped unpeeled fresh ginger
12 star anise
4 cinnamon sticks (2 1/2 in. long)
2 tablespoons red chile flakes
Zest of 4 oranges or 8 tangerines
2 cups orange juice or tangerine juice

Instructions

Pour 2 1/2 qts. water into a deep pot. Add remaining ingredients except orange juice. Cover, bring to a boil, then reduce heat and simmer 30 minutes. Nest pot in ice water until cool. Discard cinnamon and stir in orange juice.
