Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

1 1/2 cups heavy whipping cream, chilled
1 tablespoon plus 1 1/2 teaspoons stevia sugar substitute, such as Truvia
1/4 cup canned or homemade pumpkin puree
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/8 teaspoon ground cloves
Sugar-free cheesecake, for serving

Instructions

Add the heavy cream to a large bowl. Beat with an electric hand mixer on medium speed until it just beings to thicken, and then sprinkle the stevia over the top. Continue beating until soft peaks appear, and then add the pumpkin, vanilla, cinnamon, allspice and cloves and continue to beat until stiff peaks appear. Use about half of the whipped cream as a topping for cheesecake. Put the remaining whipped cream in a small bowl to pass around with other desserts.
