Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

1 medium apple without skin
1/4 tsp cinnamon
2 dark rye crackers
1/2 packet sweetener
1/2 cup water
1/2 oz raisins

Instructions

1. Core, peel and slice the apple.

2. Stew the apple in half a cup of water and sweetener in the microwave for 4 minutes.

3. Remove the apple "stew" from the microwave. Sprinkle with cinnamon and add the crushed dark rye crackers and raisins.

4. Serve hot or warm.
