Dessert: Tart Cherry Cheesecake Bars

Ingredients

18 tbsp. shortbread cookies from a 1-lb pkg (like Keebler’s Simple Shortbread cookies)
3 tbsp. unsalted butter

Instructions

Heat oven to 325 °F. Line a 13 x 9 x 2-in. baking pan with nonstick foil, letting foil extend several inches beyond 2 short ends.
Pulse cookies in food processor to fine crumbs; add butter and pulse until crumbs are evenly moistened. Scatter crumbs over bottom of prepared pan and press into an even layer. Bake 15 minutes or until lightly browned. Cool on wire rack.
