Lunch: Strawberry Smash-Up Ice Cream Sandwiches
Recipe by Frank P. Melodia A homemade ice cream sandwich with a grown-up flavor combination.
Ingredients
1 batch Classic Chocolate-Chip Cookies
6 c. strawberry ice cream
Instructions
Place about 1/2 cup of strawberry ice cream, softened, on the bottom of a cookie and spread it almost to the edges; then top with another cookie. Repeat to make 12 ice cream sandwiches.
Place on a baking sheet in the freezer for 1 hour to firm up the ice cream. To store in the freezer for up to 1 week, wrap each sandwich individually in plastic wrap, then put in a resealable bag.
