Health and fertility benefits of Morning Glory Muffins

Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. (Reference: http://www.ncbi.nlm.nih.gov/pubmed/11506060). Apples will improve your body's sensitivity to insulin (Reference: http://care.diabetesjournals.org/content/27/1/281.full)

Ingredients

1 1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup old-fashioned or quick-cooking oats, uncooked
2/3 cup unsweetened applesauce
1/3 cup fat-free ( skim) milk
1/4 cup light (mild) molasses
1/4 cup packed brown sugar
2 tablespoons canola oil
1 large egg
3 medium carrots, shredded (about 1 1/2 cups)
1/2 cup chopped dried plums (prunes)

Instructions

Preheat the oven to 400 degrees F. Grease 12 standard muffin-pan cups, or line cups with fluted paper liners.
In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon and salt. Stir in the oats. In a medium bowl, mix the applesauce, milk, molasses, brown sugar, oil and egg with a fork until blended. Stir in the carrots and prunes. Add the applesauce mixture to the flour mixture and stir just until the flour is moistened (the batter will be lumpy).
Spoon the batter into the prepared muffin-pan cups (the muffin cups will be full). Bake until a toothpick inserted into the center of a muffin comes out clean, 23 to 25 minutes. Immediately remove the muffins from the pan. Serve the muffins warm, or cool on a wire rack to serve later.
